Si distinguono dal becco spesso lungo e affilato, e da zampe sottili che li sollevano da terra come trampolieri. Si nutrono predando soprattutto vertebrati come rane, serpenti e pesci. Spesso si aggregano in gruppi molto numerosi per dormire la notte o creano colonie di nidi dove anche decine di coppie allevano la prole.
